As far as I know, the disable attribute is indeed available for all form input elements.

 

When you manipulate the DOM via JS, you are not actually changing the source code, thus it doesn't change.

To view the changes made to the DOM via JS, you need to use a separate tool, such as the page structure viewer built-in to Chrome.
